- climate
-
California has a Mediterranean climate with very hot summers and mild winters. Due to its location, temperatures can drop significantly at night and in winter. These temperature variations ensure exciting and vibrant white wines.
- soil
-
Variation of vineyards located near the coast and at altitude. Sandy soils with loam and clay.
- vinification
-
The different vineyards undergo separate fermentations and then undergo 100% malolactic fermentation to accentuate its buttery characteristics. The wine then matures further in wooden barrels, of which 40% are French and 60% are American. 20% of the barrels are new.
