Chenin blanc 69%, Pinotage 31%. The grapes are picked by hand and fermented separately. After careful pressing, the Pinotage is separated from its pellets almost immediately. Fermentation is done at a low temperature (12-14° C) to preserve its freshness and subtile aromas as much as possible. Then it is blended with the juice of the Chenin, which undergoes a classical fermentation.
