Brilliant red colour, combining the generosity of Saint Emilion and the richness of Pomerol – an appellation that borders on the estate. The bouquet is redolent of ripe fruit along with subtle notes of spice, truffle, liquorice, pepper, and forest floor. The wine starts out very straightforward, going on to show roundness, body, silky tannin, and great precision. It features a long, full final showing very pleasant sensation of plenitude.

climate

An oceanic and temperate microclimate is characterized by well-distributed precipitation throughout the year and hot, dry summers due to the presence of the two rivers, Isle and Dordogne. They moderate the summer heat like the rigors of winter and protect against the risk of frost. The temperature differences are moderate.

soil

Northwest of the town of Saint Emilion, bordering on the Pomerol appellation, La Dominique has 29 hectares of remarkable soil adjoining the region's most famous vineyards: Cheval Blanc, Figeac, La Conseillante, and L’Evangile. Cabernet Sauvignon is planted on an extension of Pomerol's clay-gravel plateau in the northern part of the estate. Thanks to the warm gravel, the terroir there is ideally suited to this late-ripening variety, whereas the clay contributes density and concentration to the wine. In the southern part of the estate, the clay-limestone subsoil, typical of Saint Emilion, is accompanied by blue clay that accounts for the wine's tension, finesse, and minerality.

vinification

Merlot (80%), Cabernet Franc (15%) and Cabernet Sauvignon (5%) Functioning entirely by gravity flow, the cellar houses truncated cone-shaped stainless steel vats for gentle extraction. After sorting and crushing, the grapes from each specific plot and each grape variety are put into separate vats.The cellarmaster's aim during the 16 months of ageing is to preserve the wine's intrinsic fruitiness. 60% ages in new oak barrels and the rest in barrels used for one previous vintage, amphorae, and stainless steel vats.
