Refined but deep and structured with notes of fruit, brioche and complex accents through ageing. On the palate, this Cava is creamy, lively and enjoyable. The palate is powerful and well balanced with a long aromatic persistence. It is a cava of unparalleled quality and refinement.
This typical Champagne blend is an excellent alternative to "the real work". Very tasty as an aperitif and matches a wide range of dishes.
- climate
-
A temperate Mediterranean climate with highs of 27.8ºC and lows of 2.6ºC. The annual average is 14.4ºC. Precipitation is between 500 and 600mm per year and there is average 2,548 hours sunshine per year. The Penedès has 3 levels of altitude (0-250m, 250-500m and 500-800m), each of which is influenced by the climate.
- soil
-
The soil is rich in clay and limestone. Here, too, the altitude plays a role. The lower the more sand and lime, the higher the more clay.
- vinification
-
Pinot Noir 60% and Chardonnay 40%. They are fermented separately in stainless steel vats at a very low temperature. Part of the Chardonnay is fermented in old oak barrels. The second fermentation of 2 months takes place in bottles, which is typical for the method champenoise. The bottles are stored 'sur lattes' for at least 2 years.
