Beautiful, bright color with yellow-green reflection. Bold but more than successful assembly of these 4 grapes. Rich nose with a fine and seductive wood note. Nice full taste with sunny and exotic notes of Rolle and Viognier, while Chardonnay determines the wonderfully creamy character. The Sauvignon gives the wine vibrancy and fresh notes of citrus. Harmonious and balanced final that lingers for quite some time.

This culinary style calls for rich dishes. Grilled fish with accompanying sauce, varied pots with vegetables, salads with chicken or other poultry, white meat and soft cheeses.

climate

The Cévennes have a Mediterranean climate (warm, dry summers and mild winters) that is strongly influenced in the intermediate seasons by cooling winds from the north and by rains and coolness coming from the Pyrenees. There can sometimes be a lot of precipitation in a short time. These temperature fluctuations (also during the night) guarantee a longer and better ripening of the grapes.

The massif of the Cevennes is one of the last foothills of the Massif Central and is mainly dominated by calcareous soils with clay and boulders.

vinification

Chardonnay, Rolle, Viognier and Sauvignon Blanc. Manual harvest. After careful pressing, the grapes are fermented separately in stainless steel vats under low temperature for 14 days. After one month, the wine is assembled, after which the wine stays on its lees for 3 months in wooden barrels of 225 liters with regular batonnage. The wine is then filtered and bottled in early spring.
